Santanyí magazine 79 ··· Christmas turkey “Escaldums” The christmas turkey “Escaldums” is a dish which is part of our grandparent’s memory and brings us back into times when it was a tradition to buy a turkey at the Santo Tomás fair, one of the few which was celebrated in Palma, and made it to be one of the essential christmas dishes. The Santo Tomás fair was installed around Puerta Sant Antoni before still at “Ses Enramades”, where the Hotels had been, which then converted into the transport agencies’ offices, which travelled to the villages from there. It was most common, that one would walk the recently bought animal home, the little ones would impatiently wait for the moment of encountering another turkey’s purchaser to provoke a turkey fight. He whose turkey at themere sight of another turkeywouldbloat and swell the most, won. It is evident that at this time there weren’t too many pastimes. However the dish continued to be one of the island’s most delicious for future generations! The turkey is a fowl originating from Central and North America, which came toSpain on one of themany returns of the conquistadores in the end of the XV century. It´s more than a recipe prepard with love and dedication. It is what made us gather around one table as a family and helped us grow...and therefore it should not be forgotten.
